This is an exciting opportunity in Indianapolis, Indiana for our Hospitality Group for an Indianapolis Sous Chef.

The Cummins Sous Chef elevates and supports Cummins business by providing world class products and services to Cummins guests and leadership. The Sous Chef must offer solutions and be able to personalize the delivery of services to meet the specific needs of each guest. The Sous Chef must constantly uphold exceptional levels of quality, service and efficiency, while ensuring that Cummins Hospitality standards are met. The Sous Chef is responsible for managing and preforming all tasks of the kitchen in the absence of the Executive Chef.

  • Sustain a working knowledge of all upcoming services

  • Execution of recipes in accordance with the Food Philosophy

  • Keep current on food trends

  • Guide and direct any temporary staff

  • Maintain a clean and organized work space

  • Maintain open communication with the all Indy Hospitality staff

  • Follow all health & safety guidelines

  • Contribute to opening and closing tasks as assigned; could include tasks outside of the kitchen

  • Maintain food freshness by following FIFO and proper organization

  • Lead by example

  • Uphold Global Integrated Services Hospitality standards

  • Assist in all areas of Indy Cummins Hospitality including but not limited to FOH, MRS, Front Desk, Conference Center and Logistics

  • Aid in interviewing and hiring for kitchen staff positions

  • Meet with Dining Room Manager to discuss menu publishing when the Chef is unavailable

  • Lead kitchen staff through service execution and hold them accountable to department standards, policies and procedures

  • Aid in setting standards and “brand identity” for Global Integrated Services Hospitality

  • Oversee Inventory of all kitchen products, goods and services

  • Assist the Chef in training of all kitchen employees regarding standards, policies and procedures

  • Provide professional leadership and direction to kitchen staff

  • Assist the Chef in in setting and writing staff schedules and job duties to establish service standards

  • Foster quality and professional relationships with all approved vendors

  • Maintain standards on an ongoing basis with the following :

  • Complete guest satisfaction

  • Sanitation, safety, cleanliness and hygiene

  • Ensure optimum performance in all duties and responsibilities

  • Report current status and goals at monthly Cummins Hospitality leadership meetings when the Executive Chef is unavailable

  • Attend weekly services meetings

  • Lead by example with maintaining department standards, policies and procedures

  • Have knowledge of all Front of House tasks including but not limited to: Bartending, Wine Service, Dining Room Management, Serving, Bussing, Room Sets and Tear Downs and Meeting Room Services

  • Have knowledge of all Back of House tasks including but not limited to: general cooking techniques, savory and sweet Ingredients, kitchen roles and positions and kitchen hierarchy

  • Have knowledge and the ability to perform all of Back of House tasks including but not limited to: Ware Washing, FIFO and Off-Site Catering Procedures

  • Have a working and practical knowledge of the cuisine of foreign cultures

  • Have a working and practical knowledge of cooking techniques and ingredients

  • Follow the department aesthetic guidelines

  • Have excellent plating skills

  • Have an understanding of the elements of Banquet Design

  • Customize experiences to fit unique customers’ needs

  • Assist the Chef in providing reports and metrics on food costs and consumption

  • Maintain confidentiality pertaining to business matters

  • Maintain understanding of Hospitality role within Global Integrated Services

  • Maintain organization of all food storage areas

  • Participate in opening/closing lists

Compensation and Benefits

Hourly rate commensurate with experience. This position will need 2 years of experience in the food, beverage, and hospitality service industry. Must be Serv Safe certified in the state of Indiana.

This position will be based in Indianapolis, Indiana. The physical environment requires the employee to work both inside and outside. Employee may be requested to work overtime and weekends for special program events. Employee is required to lift 30lbs. Extreme hot or cold environments should be expected.
